Just a few days ago my blogging friend Richard of Zurich pointed to my attention a frightening trend revealed in the Guardian : France's tradition of the three-course restaurant lunch is in danger of being killed off by the economic crisis. the French are abandoning long lunches in favor of lighter foods, take-away salads and sandwiches.Around 3,000 traditional French restaurants, cafes and bars went bust in the first three months of 2008 and unions predict a further rush of closures as people worry about making ends meet. The number of French restaurants going bankrupt rose by 25% from last year, and cafes forced to close were up by 56%.
Le Figaro's renowned restaurant critic François Simon said yesterday that French consumers' frugality had changed national eating habits and forced restaurant owners to the brink. Above is a fairly typical French sandwich: a third of a baguette with lettuce, tomato and ham. The traditional "jambon beurre" (ham and butter) served in cafés when I was young was a much more basic affair consisting of a third of a baguette hastily cut behind the counter with a few heavy dips of butter and a slice of ham slapped into it. No lettuce, tomatoes, mayonnaise or what have you but the freshest, crispiest, yummiest thing. Today they are becoming far more fancy with all sorts of things in them but the baguette (French stick bread) remains the norm.

Il y a quelques jours, mon ami blogueur Richard de Zurich a attiré mon attention sur une tendance qui l'inquiète fort : la mort des longs déjeuners français avec entrée, plat, dessert, vin et café (voire apéritif et digestif pour les repas d'affaires) en faveur de repas rapides pris sur le pouce, sandwiches et autres salades à emporter. Environ 3000 cafés, bars et restaurants de cuisine française ont fermé durant le premier trimestre 2008, tués par la récession économique qui force les français à se serrer la ceinture. Le nombre de restaurants faisant faillite a augmenté de 25% par rapport à l'an dernier, et les cafés obligés de fermer de 56%. A propos de sandwich, ceux-ci (jambon tomate salade) semblent devenus la norme mais je me souviens avec émotion du "jambon beurre" d'autrefois, tout simple: un tiers de baguette coupé derrière le comptoir à la dernière minute avec quelques morceaux de beurre et une tranche de jambon jetés dedans à la va-vite. Du basique taillé à la hache mais frais comme pas deux.
